Fresh Mango Salsa

As the weather warms up there's nothing better than a homemade salsa that's filled with lots of fresh sweet fruit and crisp peppers to provide a bit of a kick. Served with chips or those amazing shrimp tacos with cilantro lime slaw from the last recipe shared on this site, this fresh mango salsa is sure to be a hit!

It's tasty and loaded with antioxidants and vitamins too!

Mango:

Reduces *oxidative stress, aids digestion, boosts immunity, and supports heart and eye health.

Bell Pepper:

Improves eye health, reduces inflammation, and prevents anemia.


Red Onion: Fights bacteria, protects the body from ulcers, various cancers, heart disease, and allergies.

Cilantro: Reduces the risk of heart disease, diabetes, and obesity, raises energy levels, and helps maintain healthy hair and skin.

Lime: Helps prevent inflammation, promotes heart health, and improves immunity.


Ingredients:

1 ripe mango peeled and diced

1/2 red bell pepper diced

1/2 red onion diced

1/2 to 1 jalapeno diced (depending on how much of a kick you like!)

1 bunch of cilantro finely chopped

1 lime zested and juiced

1 tsp. garlic powder

**salt and pepper


Instructions:

In a large bowl, combine the diced mango, bell pepper, red onion, and jalapeno.

Stir in the cilantro, lime zest, lime juice, garlic powder, salt, and pepper. Enjoy!


*Oxidative stress is a state that occurs when there is an excess of free radicals in the body's cells. The body produces free radicals during normal metabolic processes. Oxidative stress can damage cells, proteins, and DNA, which can contribute to aging.

**salt and pepper should always be adjusted according to taste / and if there is a concern with blood pressure always use less salt or consider a salt substitute instead
